FIRST DISHES
DOUBLE-YOLK FRESH PASTA TAGLIOLINI WITH SCAMPI, BLACK SUMMER TRUFFLE AND CREAM OF PECORINO VENETO CHEESE
Recalls the classic scampi busara but with new attention and originality. The crustaceans go very well with Pecorino Veneto, a very sought-after Pecorino from the Berici Hills. And finally, the truffle adds a refined touch to the dish. It is one of the most loved dishes by our customers.
Recommended wine: Sauvignon "Piere"
Sauvignon "Piere," a very pleasant, intense and broad white wine with aromas of white flowers, citrus peel, yellow fruit, peach, pineapple, gooseberry, and medicinal herbs. It will leave you with a fresh and harmonious taste.
ORGANIC SENATORE CAPPELLI SPAGHETTI WITH SPIDER CRAB
The spider crab is a crustacean at home here at La Caravella: fished from the depths of the lagoon, shaped like a large sea spider but with a very tasty and delicate flesh, it is often used as an appetizer or as a first course.
Our recipe is true to tradition: the crustacean is first expertly cooked in vegetable-scented water and then very patiently scooped out. But the interesting thing is that we preserve the coral found inside to then prepare an exquisite butter that will flavor the pasta when seasoning with the flesh. Finally, a hint of lemon grass will go to refresh the palate and the sense of smell, giving a unique combination of flavors.
Recommended wine: Nosiola "Fontanasanta" from the Foradori Winery
The "Fontanasanta" Nosiola in Amphora presents itself in the glass with intriguing intense golden color. On the nose, while always graceful and gradual, such a wine is endowed with enormous complexity and variety of appeals: dehydrated orange, aromatic herbs, mineral puffs and exotic fruit come together in a cohesive and rhythmic profile. Lean but deep sip, made complex and long by a truly refined saline texture. Universal white.
